Avocado Toast Recipe

This avocado toast recipe is a very popular recipe with my vegan guests.

If you offer it with a poached or fried egg on top, it's no longer vegan but is a popular choice with vegetarian and meat eaters alike.

Make it gluten free by serving on top of gluten free bread or a potato rosti 

It doesn't really need a recipe, but here are a few pointers:

You can just serve it up sliced with a bit of salt and pepper. The problem with this is you really do need that rare thing; a "Perfectly ripe" avocado.

I prefer to "crush" the avocado. This means you can scoop out any less than perfect  black bits. I crush my avocado with the seasoning in my Kenwood mini chopper - see the blog post about my favorite gadgets here for more info.

I like my food well seasoned so I add fresh coriander, lime, salt, pepper and chilli flakes.

Make sure you make it very clear on your breakfast menu what ingredients your avocado toast recipe includes. Coriander, in particular, is a real love it/hate it food. And not everyone can stomach chilli at breakfast.

Ingredients for 1 person

  • 1 ripe avocado
  • 1 pinch salt
  • A grind of fresh black pepper
  • 1 pinch of dried chilli flakes
  • 1 teaspoon lime juice
  • 5 or 6 coriander stems ( finely chopped )
  • Granary bread toasted
  • Poached  or fried egg ( optional and means no longer vegan )

Whiz all of the ingredients in a mini processor till chunky or crush with a fork.

Test for seasoning and add more salt/pepper or lime juice if needed.

Drizzle the toast with a little olive oil. Pile on the avocado and top with an egg if preferred.
